This recipe showcases the Vitamix's ability to so thoroughly crush ingredients that all it takes is frozen fruit, half-and-half and some flavoring, if desired, to make ice cream. No ice cream maker (let alone freezer) is required.

This technique can be used with the frozen fruit of your choice, but the amount of sweetener would need to be adjusted to taste. Freeze in an airtight container for up to 2 weeks.

  • Step 1

    Combine the half-and-half, frozen blueberries and confectioners' sugar in the Vita-Mix canister and secure the two-part lid.

  • Step 2

    Select "variable," speed 1. Turn machine on and quickly increase speed to 10, then switch to high.

  • Step 3

    Insert the tamper through the lid to press the frozen blueberries into the blades while the machine is running (the tamper can be shoved down so that it does not touch the blades). Process for about 30 to 60 seconds, until you hear a loud pulling sound indicating that the mixture is frozen and has formed 4 mounds. Turn off the machine; running it longer will cause the mixture to start to melt.

  • Step 4

    Let the mixture soften for about 20 minutes in the refrigerator or about 5 minutes at room temperature before serving.
